From food truck to brick and mortar, casual Latin food with an American twist moves to northern Colorado Springs.
Piglatin Cocina is located at the intersection of North Union and Dublin Boulevards. It opened about two weeks ago.
The co-owner and head chef, Andres Velez, said ever since they opened at the end of January, they’ve been overwhelmed with customers.
“It’s good food, it’s good ambiance,” Velez said. “We can’t just focus only on downtown, downtown is getting all the good stuff, and I love downtown, but the rest of the city also needs some love, you know.”
Piglatin Cocina is open Monday through Thursday from 11 a.m. to 11 p.m. and Friday and Saturday from 11 a.m. until midnight.
The owners plan to get their popular food truck, Piglatin Truck, up and running again, but said there are just a few things they have to have to figure out first.
In the future, they’ll also be adding weekly specials to the menu.
