Just 67 restaurants in North America meet AAA’s rigorous Five Diamond expectations in 2019, and The Penrose Room at The Broadmoor Hotel is one of them.
The chef at The Penrose Room invited FOX21 inside the kitchen to see what goes into the award-winning cuisine.
Luis Young has been the chef at The Penrose Room since November. Before that, you could find him commanding the kitchen at The Summit.
With about 10 team members, Young said The Penrose Room’s success starts with the cream of the crop.
“We have cooks from Turkey, from Serbia, from Mexico, from Korea, and that itself creates value because it allows us to learn from them, and then once we’ve learned all of these different techniques, different flavor profiles, we can implement that into tasting menus,” Young said. “Ultimately it’s the guests who take advantage of all of this.”
The restaurant uses locally-sourced ingredients for farm-fresh tasting menus that change daily. Guests come for the experience, but stay for the flavorsome fare.
“You cannot start a good experience with so-so or okay product,” Young said. “You always have to start with the best product, and then just use good technique.”
This food philosophy has landed The Penrose Room AAA’s Five Diamond rating for the past 12 years and Forbes’ Five Star rating for the past 10 years.
“That’s a level of standard for us to maintain and to keep,” Young said. “For the guests, it’s a reassurance that we’re taking really, really good care of them.”
