Chef Justin Trudeau from Nosh in downtown Colorado Springs finishes up his pork chop with portabello gravy dish.
He got his pork from John Socolofsky, a farmer & rancher from Douglas County, who specializes in providing Colorad-raised meats and produce to local restaurants.
Trudeau said that Socolofsky's pork is some of the best he's ever tasted, and that's why he called on him for the main ingredient of this dish.
