Pueblo woman is finalist in bread recipe contest

PUEBLO, COLO. -- Amber Diamond of Pueblo was a top finalist in this years' new "Fleischmann's Yeast Sensational Sandwich Bread Contest" at the Colorado State Fair.

This newly themed contest is in celebration of the 250th Birthday of the Sandwich in 2012!

Amber placed for her tasty Incredibly Good White Bread Rolls with Sweet & Spicy BBQ Pulled Beef, a recipe she loves to make.

This was Ambers' first time competing in the bread contest at the fair!

For the Fleischmann's Yeast contest judges were looking for the most "Sensational Sandwich Bread." The bread "makes the sandwich" so contestants baked their best and used any type of Fleischmann's Yeast.

Sandwich breads were judged for the following criteria: bread flavor, bread texture, sandwich filling, appearance and creativity.

Recipe:

INCREDIBLY GOOD WHITE BREAD ROLLS (DIABETIC FRIENDLY)

3-1/2 to 4 cups all-purpose flour

1 package Fleischmann's Active Dry Yeast

1 cup milk

1/3 cup artificial sweetener

1 tablespoon sugar

1/3 cup butter (or margarine/shortening)

3/4 teaspoon sea salt

2 eggs, beaten

1. In a large mixing bowl stir together 2 cups of flour and Fleischmann's yeast. In a medium saucepan, heat and stir milk, artificial sweetener, sugar, butter and salt just until warm (120 to 130 degrees F) and butter almost melts. Add milk mixture to yeast mixture along with eggs. Beat with an electric mixer on low to medium speed for 30 seconds, scraping sides of bowl constantly. Beat on high speed 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.

2. Turn dough out onto a lightly floured surface. Knead in enough remaining flour to make moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape the dough into a ball. Place in a lightly greased bowl; turn once. Cover and let rest in a warm place until double (about 1 hour).

3. Punch dough down. Turn dough out onto a lightly floured surface. Divide dough in half. Cover and let rest for 10 minutes. Meanwhile, lightly grease baking sheets.

4. Shape the dough into 2-inch balls and place on prepared baking sheets. Cover and let rise in a warm place until nearly double in size (about 30 minutes).

5. Bake in a 375 degree F oven for 12 to 15 minutes, or until golden. Immediately remove rolls from pans. Cool on wire racks.

Yields: 24 to 36 rolls. Prep: 45 minutes. Rise: Approximately 1 hour and 30 to 45 minutes. Bake: 375 degrees for 12 to 15 minutes.

SWEET & SPICY BBQ PULLED BEEF

2 to 3 pounds beef roast

1 (15 ounce) can tomato sauce

2/3 cup honey

2 small jalapenos

1/3 cup apple cider vinegar

1/3 cup light brown sugar

2 tablespoons chipotle Tabasco

1 tablespoon butter

1 small sweet onion

1 teaspoon (2 cloves) minced garlic

Heat oven to 275 degrees F. Season beef with salt, pepper, garlic powder and onion. Place in baking pan and cover with foil. Cook about 2 hours until done. Then remove and shred beef, returning to the juice to rest. In the blender combine the tomato sauce, honey, jalapenos, vinegar, brown sugar and Tabasco. In a 6-quart pan, melt butter with sweet onion and garlic. Combine blended ingredients with the onion and garlic. Simmer on low-medium heat for about 30 minutes, and then add beef. Let cook down on low for an additional 30 minutes. Cut rolls in half and place BBQ pulled beef inside.
