BJ's Restaurant and Brewhouse: Sesame chicken salad

Chef Ray Martin from BJ's Restaurant and Brewhouse stopped by FOX21 Morning News to talk about the variety of items on their menu -- including the lighter fare of sesame chicken salad.

BJ's fourth location in Colorado (and the newest) is located in the University Village Shopping Center, 5150 North Nevada Avenue, in Colorado Springs.

Here's the recipe for the sesame chicken salad:

Sesame Chicken Salad – 1 serving

Ingredients:
- Napa cabbage (shredded), 2 cups
- shredded carrots, 1 tablespoon
- shredded red cabbage, 1 tablespoon
- sesame dressing, 2 oz.
- grilled chicken breast, 4 oz.
- toasted almonds, 2 teaspoons
 -red bell pepper (diced ¼ in.), 1 tablespoon
- green onions, chopped, 1 tablespoon
 -sesame seeds, ½ teaspoon
- Mandarin oranges, 5 each
- fried wontons or rice noodles, 1 cup

Procedure:
In large mixing bowl combine cabbage, carrots, red cabbage with sesame dressing and toss well.
Place in serving bowl and top with grilled chicken, diced ½”, almonds, red bell peppers, fried wontons, green onions, mandarin oranges and sesame seeds.
Serve immediately.

Sesame Dressing:
- rice wine vinegar, 2 tablespoons
- sugar, 2 tablespoons
- soy sauce, 1 teaspoon
- sesame oil, 1 teaspoon
Mix well until sugar is dissolved.
