Chef Chett Bland from Charles Court at The Broadmoor stopped by FOX21 Morning News to create a unique dish with scallops on a bed of "mock" ham risotto.
Bland used the word "mock" because this risotto is made with spelt - a European wheat that's higher in protein than the traditional Arborio rice used in risotto.
Another unique element in the dish is the tasso ham that he uses. The pork product comes from animals raised at Sokolofsky Farms outside of Larkspur in Douglas County. Chef Greg Barnhill said this is part of new agreement his restaurant has created with Sokolofsky Farms to bring more locally-grown and locally-raised products.
